Ingredients

1 cup ripe bananas, mashed (about 2 medium-sized bananas)

1/4 cup unsweetened applesauce

1/4 cup honey or maple syrup

1/3 cup unsweetened almond milk (or any milk of choice)

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour (or whole wheat flour for a healthier option)

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a donut pan with non-stick spray or lightly oil it to prevent sticking.

Combine Wet Ingredients: In a large mixing bowl, combine the mashed bananas, applesauce, honey (or maple syrup), almond milk, and vanilla extract. Use a whisk or fork to beat until the mixture is smooth and fully integrated.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt until well combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture. Lift and fold the flour mixture into the wet ingredients gently, until just combined. Be careful not to overmix; a few lumps are okay.

Fill the Pan: Transfer the batter into a piping bag (or a zip-top bag with a corner snipped off) and fill each donut cavity about 2/3 full. This will give rise to fluffy donuts without spilling over.

Bake: Place the donut pan in the preheated oven and bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. You want a soft, springy texture.

Cool and Coat: Once baked, let the donuts cool in the pan for about 5 minutes before transferring them to a wire rack. While they're still warm, combine the granulated sugar and ground cinnamon in a bowl. Roll each donut in this mixture to coat them evenly.

Serve: Let the coated donuts cool slightly before serving. These donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
