2 medium zucchinis

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Prepare the Zucchini: Preheat your oven to 225°F (110°C). Wash the zucchinis thoroughly and slice them into thin rounds, about 1/8 inch thick. You can use a mandoline for even slicing.

    Remove Excess Moisture: Place the zucchini slices in a colander, sprinkle with salt, and let them sit for about 30 minutes. This will help draw out excess moisture, making your chips crispier. After 30 minutes, pat the zucchini slices dry with a paper towel.

      Mix the Cheese Coating: In a mixing bowl, combine the shredded cheddar cheese, grated Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and any additional seasonings you prefer. Mix well until they are thoroughly combined.

        Coat the Zucchini: Arrange the zucchini slices on a baking sheet lined with parchment paper. Lightly spray them with cooking spray or brush with olive oil to ensure the cheese adheres well. Generously sprinkle the cheese mixture evenly over each zucchini slice, pressing down slightly to help the coating stick.

          Bake: Place the baking sheet in the preheated oven and bake for about 2 to 3 hours, or until the zucchini chips are golden brown and crispy. Check periodically and rotate the baking sheet if necessary to ensure even cooking.
