Baked Buffalo Chicken Egg Rolls

2 cups shredded cooked chicken

1/2 cup buffalo sauce (adjust to taste)

1/2 cup cream cheese (softened)

1 cup shredded cheddar cheese

1 cup shredded carrots

1/2 cup green onions (chopped)

12 egg roll wrappers

Cooking spray

Blue cheese or ranch dressing (for dipping)

Optional: celery sticks for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.

    Prepare Filling: In a large bowl, combine the shredded chicken, buffalo sauce, cream cheese, shredded cheddar cheese, shredded carrots, and chopped green onions. Mix until all ingredients are well incorporated.

      Assemble Egg Rolls: Lay an egg roll wrapper on a clean surface, with one corner pointing towards you (like a diamond). Place about 2-3 tablespoons of the chicken mixture near the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll towards the top corner, sealing with a dab of water if needed.

        Repeat: Continue this process until all the filling has been used. You should have about 10-12 egg rolls.

          Bake the Egg Rolls: Place the egg rolls seam-side down on the prepared baking sheet. Lightly spray the tops with cooking spray to help them crisp up in the oven. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, flipping halfway through.

            Serve: Once baked, remove the egg rolls from the oven and let them cool slightly. Serve warm with blue cheese or ranch dressing for dipping and a side of celery sticks for extra crunch.
