Avocado Chicken Bacon Sliders

1 lb ground chicken

1 ripe avocado, mashed

6 slices cooked bacon, chopped

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg, lightly beaten

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper, to taste

12 small slider buns

1 cup baby spinach or arugula

1/2 cup sliced tomatoes

Optional: Slices of pepper jack cheese

Prepare Chicken Mixture: In a large bowl, mix together the ground chicken, mashed avocado, chopped bacon, breadcrumbs, Parmesan cheese, and the beaten egg. Season with garlic powder, onion powder, paprika, salt, and pepper. Make sure all ingredients are well combined.

    Form Slider Patties: Divide the mixture into 12 equal portions and shape them into slider-sized patties, about 1-inch thick.

      Cook the Patties: Preheat a grill or skillet over medium-high heat. Lightly grease the surface if needed. Cook the chicken patties for about 5-6 minutes per side, or until they are golden brown and internal temperature reaches 165°F (75°C). If using cheese, add a slice on top of each patty during the last minute of cooking to melt.

        Toast Slider Buns: While the patties are cooking, lightly toast the slider buns on the grill or in a toaster.

          Assemble the Sliders: On the bottom half of each toasted slider bun, place a chicken patty. Top with a handful of baby spinach or arugula and a couple of slices of tomato. Finally, add the top half of the bun.
