Ingredients

2 large cucumbers

2 tablespoons sesame oil

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon honey or agave syrup

1 teaspoon grated fresh ginger

1 garlic clove, minced

1 teaspoon chili oil (optional for heat)

2 green onions, finely sliced

1 tablespoon sesame seeds (toasted for extra flavor)

Fresh cilantro or mint leaves for garnish

Instructions

Prepare the Cucumbers:

    - Wash the cucumbers thoroughly. Using a spiralizer or julienne peeler, create noodles from the cucumbers. If you do not have a spiralizer, you can slice the cucumbers thinly lengthwise and then stack the slices to cut into thin strips.

      Make the Dressing:

        - In a small bowl, combine the sesame oil, soy sauce, rice vinegar, honey (or agave syrup), grated ginger, minced garlic, and chili oil (if using). Whisk until well combined and smooth.

          Combine Ingredients:

            - In a large mixing bowl, add the cucumber noodles and pour the dressing over them. Toss gently to ensure all noodles are coated evenly with the dressing.

              Add the Garnishes:

                - Sprinkle the sliced green onions and toasted sesame seeds over the cucumber noodles. Toss gently to mix.

                  Chill and Serve:

                    - Allow the noodles to sit for about 10-15 minutes to absorb the flavors. For an even zestier flavor, chill in the refrigerator for 30 minutes before serving. Just before serving, garnish with fresh cilantro or mint leaves.

                      Enjoy:

                        - Serve the cucumber noodles as a refreshing salad or a light main dish. They pair wonderfully with grilled meats or as part of a larger Asian-inspired meal.
