Apple Pie Overnight Chia Pudding

1/2 cup chia seeds

2 cups unsweetened almond milk (or any plant-based milk)

1/4 cup pure maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

A pinch of salt

2 medium apples, peeled, cored, and diced

1 tablespoon lemon juice

1/4 cup chopped pecans or walnuts (optional)

Extra cinnamon for topping

Prepare the Apple Mixture: In a medium bowl, combine the diced apples with lemon juice, ground cinnamon, and ground nutmeg. Set aside to allow the flavors to meld.

    Make the Chia Pudding Base: In a large mixing bowl, whisk together the chia seeds, almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until well combined. Let sit for 5-10 minutes and then stir again to prevent clumping.
