Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 large egg

1 cup milk

2 tablespoons melted butter

1 medium apple, peeled, cored, and finely chopped

Cooking spray or additional butter for frying

Maple syrup for serving

Optional: Whipped cream for garnish

Instructions

Prepare the Pancake Batter: In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.

Mix Wet Ingredients: In a separate bowl, beat the egg and then add milk and melted butter, stirring until blended.

Combine and Add Apples: Pour the wet mixture into the dry ingredients, mixing gently until just combined. Fold in the finely chopped apple pieces to distribute them evenly throughout the batter.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.

Cook Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes or until bubbles form on the surface. Flip and cook for an additional 2-3 minutes, or until golden brown. Repeat with remaining batter, adjusting heat as needed.

Assemble the Sandwiches: Once the pancakes are cooked, stack two pancakes together with your choice of filling in between (for example, cream cheese, apple slices, or plain).

Serve: Top the pancake sandwich with a drizzle of maple syrup and, if desired, a dollop of whipped cream. Enjoy while warm!
