Apple Cinnamon Blender Muffins

2 medium ripe bananas

1 cup unsweetened applesauce

2 large eggs

1/4 cup maple syrup (or honey)

1/4 cup almond milk (or any milk of choice)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 cups rolled oats (gluten-free if necessary)

1 medium apple, peeled, cored, and diced (preferably a sweet variety like Fuji or Gala)

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    In a blender, combine the ripe bananas, applesauce, eggs, maple syrup, almond milk, vanilla extract, and ground cinnamon. Blend until the mixture is smooth and creamy.

      Add the oats, baking powder, baking soda, and salt to the blender. Blend again until the oats are mostly ground and the batter is smooth, but be careful not to over-blend.

        Pour the batter into a large mixing bowl and gently fold in the diced apple, and if using, the chopped nuts and dried fruit.

          Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.

            Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

              Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
