2 medium zucchinis, cut into sticks

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and black pepper, to taste

1 large egg, beaten

½ cup all-purpose flour

Olive oil spray

Prep the Zucchini: Start by washing the zucchinis and cutting them into sticks, about ¼ inch thick. Pat them dry with paper towels to remove any excess moisture, which helps them crisp up in the air fryer.

    Set Up Breading Station: In three separate shallow bowls, set up your breading station. In the first bowl, add the flour. In the second bowl, combine the beaten egg with a pinch of salt and pepper. In the third bowl, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, and a little more salt and pepper.

      Coat the Zucchini: Take a zucchini stick and dip it first into the flour, ensuring it is fully coated. Shake off any excess flour. Next, dip it into the egg mixture, allowing any excess egg to drip off. Finally, roll it in the panko mixture until fully coated. Repeat this process for all zucchini sticks.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          Arrange Zucchini Sticks: Once preheated, lightly spray the air fryer basket with olive oil. Place the coated zucchini sticks in a single layer in the basket. If needed, work in batches to avoid overcrowding. Lightly spray the tops of the zucchini sticks with olive oil for extra crispiness.
