Ingredients

12 large cremini or Portobello mushrooms

1 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional for a kick)

1/4 cup fresh parsley, chopped

1/2 teaspoon onion powder

Salt and black pepper to taste

Olive oil spray or 1 tablespoon olive oil for brushing

Instructions

Preheat the Air Fryer: Set your air fryer to 350°F (175°C) for about 3-5 minutes while you prepare the stuffing.

Prepare the Mushrooms: Clean the mushrooms with a damp cloth. Remove the stems carefully using a small knife or your hands, ensuring to create enough space for the stuffing. Save the stems for another use or chop them finely and add to the stuffing.

Make the Filling: In a medium bowl, combine the softened cream cheese, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, red pepper flakes (if using), chopped parsley, onion powder, salt, and black pepper. Mix well until all ingredients are fully incorporated and creamy.

Stuff the Mushrooms: Using a small spoon or a piping bag, generously fill each mushroom cap with the cheese mixture. Press it in gently to ensure it's well packed but be careful not to overflow.

Prepare for Air Frying: Lightly spray or brush the air fryer basket and the tops of the stuffed mushrooms with olive oil. This will help them become golden and crispy.

Air Fry the Mushrooms: Place the stuffed mushrooms in a single layer in the air fryer basket (you may need to do this in batches, depending on the size of your air fryer). Air fry at 350°F (175°C) for 10-12 minutes, until the mushrooms are tender and the tops are golden brown.

Serve: Once cooked, carefully remove the mushrooms from the air fryer and let them cool slightly. Garnish with additional chopped parsley if desired and serve warm as an appetizer or side dish.
