1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Zest and juice of 1 large lemon

Salt and pepper, to taste

2 cups cooked jasmine rice (or quinoa for a healthier option)

1 cup cherry tomatoes, halved

1 cup baby spinach

1 avocado, diced

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Shrimp: In a medium bowl, toss the shrimp with olive oil, minced garlic, red pepper flakes, lemon zest, salt, and pepper. Let it marinate for about 10 minutes while you prepare the other ingredients.

    Sauté the Shrimp: Heat a large skillet over medium heat. Once hot, add the marinated shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook them. Remove shrimp from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the cherry tomatoes and baby spinach. Sauté for 2-3 minutes until the spinach wilts and the tomatoes soften slightly. Stir well to combine.

        Combine Flavors: Return the shrimp to the skillet, squeezing in the juice of the lemon. Toss everything together gently to combine, allowing the flavors to meld for 1-2 minutes.
