8 oz (225g) pasta (penne or fettuccine works best)

2 tbsp olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juice)

1/2 cup heavy cream

1/2 cup freshly grated parmesan cheese

1 tsp dried oregano

Salt and black pepper, to taste

Fresh basil leaves, roughly chopped (about 1/4 cup)

Optional: Red pepper flakes, for a kick

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté Garlic: In a large skillet over medium heat, heat the olive oil. Add minced garlic and sauté for about 1 minute, until fragrant and golden (careful not to burn it!).

      Add Tomatoes: Pour in the can of diced tomatoes (including their juice) and add the dried oregano. Stir well and let it cook for about 5 minutes, allowing the flavors to combine and thicken slightly.

        Create the Cream Sauce: Reduce the heat and slowly stir in the heavy cream and grated parmesan cheese, mixing until the cheese is melted and the sauce is smooth. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

          Season the Sauce: Season the creamy tomato sauce with salt, black pepper, and optional red pepper flakes to taste.
